Review- Flourless Oatmeal Peanut Butter Cookies

These cookies are soft, chewy, and bursting with flavor. They are suprisingly healthy, flourless, and dairy free. Full of savory peanut butter, hearty oatmeal texture, and dark chcolate chips that melt in your mouth, you won't be able to put down these addictive cookies!

I found this recipe from my favorite blog, Sallys Baking Addiction. Each recipe I have tried from her blog, I have loved, although not all are gluten free. But thank goodness this recipe is.

There is no flour and no butter in this recipe because the oatmeal and peanut butter makes up for it. I love how moist and chewy these cookies are, even though it has oatmeal in it. I hate the feeling when you have a mouthfull of dry oatmeal. (I confess I used to eat oatmeal dry until recently. I like it much better now!) The oatmeal blends in, adds great flavor, and another dimension of texture.

And the chocolate chips. Ughhh. Don't get me started. I LOVE chocolate, so adding the chocolate chips really brings these cookies to a whole other level for me. I love taking a bite and tasting the chewy, lucious peanut butter and oats, and then a sudden pop of chocolate chips that melts on my tongue...

If you haven't tried this recipe, you need to. Now. Seriously stop whatever you are doing and make a batch (or three) of these. It will change your life.
